Sunday Dinner

A Blessed Sunday Morning to everyone!!!!
I want to share with you my husband is improving. It seems he hurted his ankle also. It is swollen and is blak. The place on the side of his leg where he was injured is now very black and is the size of a small dinner plate. The doctor had told us it would get bigger as there is bleeding inside. It is very sore. He had alot of trouble trying to use his crutches,and finds it much easier to navigate using canes. It is hard to keep a good man down they say and IT IS TRUE!!! He finds his way around even though I know he is in alot of pain. He begins threapy on Tuesday Morning.
We want to thank you so much for your prayers!!! I know God has his angels watching over us. HE IS SO GOOD!!!!
I want to share a quick and easy recipe with you. It is something I think our sweet Emily and Victoria would approve of. LOL!!!!
Open face Roast Beef Sandwiches
1lb. pound thinly sliced deli roast beef
Make a rue using flour and oil. Cook until lightly brown add water to make a gravy. I season with salt, garlic power and 3tablespoons Dale's Steak seasoning.
Cook
until hot and just beginning to come to a boil. Then add the slices of roast beef and simmer for 2 to 3 minutes.
When servering this I have already prepared a pot of homemade mashed potatoes. I serve it over homemade sourdough bread,or white store bought bread. We like coleslaw with it.
Today in honor of President's Day we will probally have Cherry CheeseCake for dessert.

Good Morning Mary,
"PRAISE GOD" your hubby is feeling better. I'm sure his ankle will be sore for a good while. I would think being on crutches would be hard too, and I'm glad he finds it better to use canes. I will still keep him and you in my prayers. Your recipe for roast beef sandwiches sounds so yummy. Sounds easy and quick too. I may have to give it a try sometime. I'm not sure if our girls would like that kind of meat, but I know they both like Deli Turkey. I guess I could use that instead? I have never made a rue. Well, unless you call making a rue when your making regular gravy. I've always made white gravy. "THANK YOU" for sharing your recipe with us. I made some homemade buttermilk biscuits and fried some sausage for my DH early this morning. He took a couple with him out on the road this morning when he left. So glad that your husband is feeling better. The open faced roast beef sandwiches sound yummy. I am making roast beef for supper tonight so will try this with the leftovers on Tuesday.

Wonderful that your dh is doing better. It'll be wonderful when he is able to begin therapy as they'll teach him so many new tricks and he'll get stronger every day.

That lunch sounds delicious and I have a deli just a half mile up the road...hmmmmmm...

Cherry cheesecake???? I'll be right over!!! hehe Such wonderful news that your hubby is starting to feel better although I can well imagine how painful his leg is. I'm sure you're taking good care of him though:-) I just did an update on Steve...he finally had the surgery today after it was postponed yesterday!! The roast beef sandwiches sure sound yummy, I love stuff like that. xox

I am so glad that your hubby is doing better. I can imagine that the pain is incredible. I do hope the doctors are keeping a close eye on it.

Your open roast beef sandwich sounds very similar to the ones that I make. Dad made these for us when we were kids. He was a great cook, as was Mom, but every once in a while he would give her a break and make these for us. He used to serve them on homemade sourdough bread.

I've enjoyed my visit here, as always. Have a safe and healthy week.

Sorry to hear that your Hubby has had an accident. I pray he makes a quick recovery with the least pain possible!

I love open faced roast beef sandwiches. I last had one at a Cracker Barrel in KY...they served it over their toasted sour dough bread with their lumpy potato's...I love lumpy potato's!

Mary, thank goodness your husband is feeling better. I know what you mean about keeping a good man down. My DH is rarely sick and even when he is he is puttering around the house fixing things he doesn't get to when he is working! Yummy sounding recipe...I make something similar I call a French Dip that we just love. The easier, the better I say, huh? Yes, it was a good weekend, worked on the house some, went to the mall and bought some new flannel sheets on sale and had appetizers for dinner at Chili's! It was nice. We are all on vacation this week...working on getting that basement room finished up....can hardly wait for the basement family room. Glad your husband is feeling better, I am sure it is such a relief for you!
