My Saturday
Tomorrow morning will find me, dusting, vacuuming, and mopping floors.
Then tomorrow afternoon I will be making candy for a church fund raiser. I have decided to make some Pecan Pralines and fudge for this event.
Pecan Pralines
1 cup pecans----- I roast these in the oven for about 3 minutes Then I toss the nuts and roast for another 3 minutes.
1 cup heavy cream
1/4 cup(1/2 stick real butter) I use the unsalted
2 cups light brown sugar
1 teaspoon vanilla extract
In a heavy saucepan with a candy thermometer over high heat cook the cream, butter and brown sugar to 240 degrees F (soft ball stage). Remove from heat and let sit for 15 seconds.
Stir in flavoring, and toasted pecans. Vigorously stir with a spoon for 10 seconds, until the mixture looks creamy and slightly thickened. Drop by spoon fulls onto wax paper.
Let cool for 20 minutes.

Awe Shucks, Mary... I thought you said you were coming to my house to vacuum, dust and mop our floors... Darn--Well, if you don't do that, at least send me some pralines!!!!

We sat and listened to the entire song this morning with the little one singing...what a treat that was!

It sounds delicious. I don't have a candy thermometer and really should get one. I love fudge and possibly I could make it with brown sugar substitute. Being diabetic is no fun at all.

That recipe is almost identical to my grandmother's Pralines. I'll have to make some.
