Blur!! It is cold!!!!

It is cold here in Southern Ky. It is 26 degrees tonight. They are calling for ice and snow tonight into morning. The ice I can do without, but I do so love snow. In fact that is what I want for CHRISTmas. Snow and lots of snow!!!!

I guess everyone is busy getting ready for Christmas. I am going to put my tree up this weekend. Then I will begin cooking.

This year my family wants lasagna for CHRISTmas dinner and coconut cake. I want to share my recipe for my Coconut Cake.

I use a white cake mix and bake according to package instructions.

Then after it comes out of the oven. I poke holes all in it. Then mix together 1 can cream of coconut and one can sweetened condensed milk. Pour this all over the top. Next ice with cool whip and sprinkle coconut all over the cake My children are each getting one of these cakes as a present this CHRISTmas.

Ive never had coconut cake! I do like coconut in some things. sounds yummy! we go to my inlaws for dinner on christmas.. Probably for ham.. or a pork roast. I should probably find out what she wants me to bring!

Oh Mary, that cake is wonderful ! Except my family likes it made with devil's food cake mix .They are big choco-holics ! I make this every year .

Your coconut cake sounds good. I use coconut milk in some main dishes (Thai dishes and curry) but haven't used the coconut cream. I'll put it on the "to try" list.

Hi Mary,
You can have ALL the snow that we are getting. It is very pretty outside...but that is it!! I'm not a winter person. Can't wait for the package. Not sure what we are having for the Christmas meals. We go to huband's side on Christmas Eve, my kids come to our house Christmas AM for breakfast and gift then we all go to my Mom's for lunch and more gifts....it's a little too much for me. However it's making memories:)

We will be having turkey at my daughter`s and then will exchange gifts.

Your coconut cake sounds delicious. I am going to try it. Mmm! I will only be able to have the tiniest piece because of my diabetes, but the my daughter and her family will love it. I will keep a couple of big pieces for hubby.

Coconut cake sounds delish we will have to try this recipe. Anything to remind me of the Islands... and warmth! It was 27 below this morning in Montana where our newlyweds are! Sorry about the ice...come look out my kitchen window to see snow. It has snowed every day since that picture was taken. My hubby could do without shoveling our driveway and walks everyday!:)

I think a lot of people asked for snow for Christmas. It's awesome that it is snowing in so many places, including Arizona and other unlikely spots.

Lasagna is so good for Christmas. Our family is usually tired of turkey. I love coconut cake like that and make one quite similar. Your blessed kiddos!

Oh, I'm loving the Christmas music here and I think that I can smell the lasagna cooking and oh how I love coconut!!!

Question on the cake. I use sweetened condensed milk all the time. But, what is cream of coconut? Does it come in a can like the sweetened milk? This sounds sooooo yummy!
