Egg salad

Have you ever made egg salad? When I first starting dating my husband{33 years ago} it was at Christmas time .His mother invited me to Christmas Eve dinner. She had all the usual fare but she also served egg salad. Let me tell you I had never heard of this dish let alone eatten it. Well I did not want to be rude so I tasted it . Isort fo like it. Mt husband loves lt. So over the years I played with it adding and changing things. Icame up with a version I like and My family loves and Imean really likes. We have two Sons. Afew years ago I had made this to take to a Church get together at Christmas time. Our sons both lived in another town about 20 minutes away. Our oldest son came to visit that day I asked him if he wanted a ham sandwich for lunch. A few minutes his Father came home on his lunch break and I asked him if he wanted an egg salad sandwich. My son said; egg salad you did not tell me you had egg salad. After he left he called his brother and told him I had made egg salad so He appeared at my door also. Needless to say I had to make more for the church social. I hope you will like it. Boil 6 eggs peel and grate them .To this add salt and pepper to taste .Then 2 tablespoons of mayo. 1 teaspoon of mustard and then 1 teaspoon of horesradish mix all then chill . serve as a side dish or on bread as sandwiches. Enjoy.

I found your blog today through Clothesline Talk and I'll be visiting again. I LOVE egg salad. I, too, had never had it until I was grown. I guess I was in my 30's and someone gave me half of their egg salad sandwich. It was great and I started making it then. My family isn't crazy about it so I don't make it often, but I love it. Your version sounds great!

I wouldn't eat it as a child but my kids (two of them...)love it!
I like to eat it while it is still warm...and Mrs. Ava Pritchett says she makes potato soup to go with hers...we used to work at the bank and talk about food :)

Hi Mary Isabella:
We could be twins because I use horse radish in my egg salad, tuna, & chicken salads (we like spicy perky foods : )
I am going to use the grating trick. What a cool way to mush them up instead of mashing : ) Thank you for the tip
